How to Verify Authentic Extra Virgin Olive Oil — Buyer Checklist

Olive oil is one of the most fraud-edited foods in the world. Between recurring FDA and EU recall notices, mislabelled “extra virgin” blends, and cut oils slipping through retail audits, professional buyers can no longer rely on a label alone. Here is the checklist we use at origin — and the one any serious purchaser should run on every supplier.

1. Check the chemistry, not the marketing

Extra virgin is a chemical grade before it is a taste claim. A genuine lot must show free acidity below 0.8% (quality oils sit far lower), peroxide values within limits, and a clean sensory panel result. Any supplier who cannot produce a certificate of analysis per lot is selling you a story. Ask for the COA before the price list.

2. Demand traceability to a single estate or defined blend

“Product of Spain, Tunisia, Italy and Greece” on one label usually means tank-blended commodity oil. Traceable oil names the estate or cooperative, the harvest year, and often the mill. Our own Domaine Sidi Khlif is single-estate from central Tunisia — pressed within hours of harvest, which is why the acidity stays low without correction. Single-source is not a premium gimmick; it is the shortest audit path.

3. Verify certification at the certifier, not the bottle

Organic claims should carry a certifier name and licence number you can look up — for EU/UK-bound goods, the certifier’s database is public. Ecocert, Kiwa, Control Union: the number on your label must resolve to the exporter’s actual certificate, current on its expiry date. A photo of a certificate is not a certificate.

4. Read the harvest date, not just the best-before

EVOO is a fruit juice with a clock on it. A bottle printed only with a best-before date (typically harvest + 18–24 months) may be holding last season’s — or older — oil. Serious buyers specify harvest date on every carton in the purchase order.

5. Taste for the three positive attributes

Authentic fresh extra virgin oil is fruity, bitter and pungent to some degree — the peppery catch at the back of the throat is polyphenols, not a fault. Flat, greasy or winey oil is aged or defective, whatever the label says. Keep a tasting protocol at receiving; it catches what labs miss between lots.

6. Question suspicious price

Olive oil has a floor cost. Offers materially below the origin market price are blending signals — cheaper seed oil, deodorised lampante, or old stock relabelled. This is where most retail fraud actually lives: not in bad labels, but in good labels on cheap oil. Tunisian origin offers a genuine cost advantage over Italian or Spanish estates — but the discount comes from land and labour, not from the tank.

7. Audit the packaging

Light and heat are the enemies. Dark glass, tins, or bag-in-box for food service. Clear PET on a supermarket shelf tells you the packer prioritised shelf appearance over oil life.

The professional’s shortcut

Ask a supplier for four things: lot COA, certifier licence number, harvest date policy, and estate/blend declaration. A real origin operator answers all four in a day. A blender answers none.
